5 Days of Light and Easy Weeknight Meals: Day 1
This is the first post in my “5 Days of Light and Easy Weeknight Meals.” This particular recipe was a brand new recipe to us and came from a Cooking Light cookbook, though we altered it slightly to work better for us. It was super easy and is definitely something we will be using again!
Chicken with Onion, Mushrooms, and Peppers
First, I sliced all the veggies so they would be ready when we needed them.
Then, we sliced the chicken breast and sautéed them in a skillet for about 7 minutes or until they were done.
Then, we removed the chicken from the pan.
Next, we added the onion and red bell pepper to the skillet and sautéed for about 5 minutes.
The next step was to add the oil, salt, pepper, and mushrooms to the mix.
After about 3 minutes, it looked even better!
We cooked it a little longer so the mushrooms and onions would be cooked even more. Then, we added the chicken and the red wine for about a minute or so.
We served this with some vegetables and garlic bread.
