5 Days of Light and Easy Weeknight Meals: Day 2

Welcome to Day 2 of “5 Days of Light and Easy Weeknight Meals!” (If you missed the first day, click here to see the recipe.) This recipe was something we kind of made up on our own. It was based on the Phil E Turkey sandwiches we sometimes get at Smiling Moose Deli, but it has our own twist.

Philly Turkey Sandwiches

Here is what you need for this recipe:

Deli-sliced turkey (we just pick up whatever is on sale at the deli)

Green pepper

Onion

Mushrooms

Olive oil

Whole wheat hoagie buns

Cheese (whatever kind you prefer)

Light mayo (optional)

All the veggies we added to the sandwiches were according to the amounts we wanted on our sandwiches, so you can adjust this to your liking as well. First, we sliced them up and put the hoagie buns on a tray.

We used a little olive oil to sauté the veggies, and once they were as soft as we prefer them, we cut up the turkey a little and add it to the pan to warm it up.

Then, we put the turkey, followed by the veggies on the buns and add cheese. We usually use slices of provolone or mozzarella, but didn’t happen to have either of those the night we made these, so we just used some light shredded Colby and jack cheese, and it still turned out perfectly. Once you have everything on the buns, we like to stick the whole sandwich in the oven for just a few minutes to brown it a little.

wpid-IMG_20140106_184909.jpgThey come out looking like this! You can add a little bit of mayo or light mayo if you prefer. As you can see here, we served it with homemade oven fries and some homemade vegetable soup.

      Thanks! It’s so easy and doesn’t feel like “just a sandwich.” It can be very filling if you fill up on lots of veggies!

      Thanks! I like to cook but I don’t always have a lot of time. And since I’m trying to keep my baby weight off, I have to be mindful of what I choose to cook. We have to get creative sometimes;)

    This sounds really yummy! Anything with sauteed vegi’s is a hit in my mind, my boys might not agree, but Momma rules the kitchen. 🙂
