5 Days of Light and Easy Weeknight Meals: Day 3
This is the third day of my “5 Days of Light and Easy Weeknight Meals.” This recipe was another brand new recipe to us and came from the Cooking Light cookbook. It turned out to be really good and pretty easy! We doubled the recipe to make 6 muffins instead of 3.
Turkey Mini Meatloaves
1 cup chopped onion
6 Tbsp dry breadcrumbs
2 Tbsp fresh parsley (I just used the spice because I didn’t have any fresh)
2 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp dried oregano
1/4 tsp black pepper
16 oz. ground turkey
2 large egg whites
6 Tbsp ketchup, divided
1/2 tsp hot pepper sauce
First, we chopped and sautéed the onion.
Then, we mixed it with the breadcrumbs, parsley, Worcestershire sauce, salt, oregano, pepper, ground turkey, and egg whites.
Next, we added 4 Tbsp of ketchup.
We put about 1/2 cup of the mixture in each of 6 muffin pans.
Next, we mixed the hot pepper sauce with 2 Tbsp of ketchup and brushed it over the top of each of the “muffins.”
About 30 minutes of being in the oven at 350 degrees, we served them with a light potato soup and roasted veggies.
