5 Days of Light and Easy Weeknight Meals: Day 3

This is the third day of my “5 Days of Light and Easy Weeknight Meals.” This recipe was another brand new recipe to us and came from the Cooking Light cookbook. It turned out to be really good and pretty easy! We doubled the recipe to make 6 muffins instead of 3.

Turkey Mini Meatloaves

Ingredients include:

1 cup chopped onion

6 Tbsp dry breadcrumbs

2 Tbsp fresh parsley (I just used the spice because I didn’t have any fresh)

2 tsp Worcestershire sauce

1/2 tsp salt

1/2 tsp dried oregano

1/4 tsp black pepper

16 oz. ground turkey

2 large egg whites

6 Tbsp ketchup, divided

1/2 tsp hot pepper sauce

First, we chopped and sautéed the onion.

Then, we mixed it with the breadcrumbs, parsley, Worcestershire sauce, salt, oregano, pepper, ground turkey, and egg whites.

Next, we added 4 Tbsp of ketchup.

We put about 1/2 cup of the mixture in each of 6 muffin pans.

Next, we mixed the hot pepper sauce with 2 Tbsp of ketchup and brushed it over the top of each of the “muffins.”

About 30 minutes of being in the oven at 350 degrees, we served them with a light potato soup and roasted veggies.

Don’t miss any of the other days in this series!

Day 1: Chicken with Onions, Mushrooms, and Peppers

Day 2: Philly Turkey Sandwiches

  1. Oh this is super cute! You know, I don’t like ketchup on my meatloaf nor can my kiddo have egg, so I have a different turkey meatloaf recipe. But I would never have thought about doing them like this, with one for each person. You could do the big muffin pan or the mini loaf pan. Pinning!

  2. Adelien says:

It looks very yummy. Now I am very hungry. Ready for dinner.

  3. Carli says:

Yum! We make something similar with ground beef and use bbq sauce on top! Thanks for sharing!

  4. I will have to try this next time. I make Turkey meatloaf the regular way most times.

  5. Yum! Meatloaf is one of my favorite meals! Put them in a mini loaf pan, and it make it cute too! 🙂

  6. Those look really good, and they are the perfect size for children too!

  7. I love cooking light and these look great! Thanks for sharing, pinning and tweeting this.

  8. Embrace says:

That looks easy and delicious. I love anything that can be made ahead to save time later! Thanks for sharing!

    • Rachel says:

I think these would be very easy to make ahead and freeze…it is so nice to be able to pull something out of the freezer and just heat it up:)
