Breakfast Casserole

I wanted something special, but easy, to make for breakfast when we celebrated Christmas. I found this really easy recipe and altered it to make it work best for our family. I made only half of what the recipe called for since we didn’t need a whole pan of it and I was able to make it the night before, so all I had to do in the morning was put it in a preheated oven.

First, I cooked approximately a 1/2 pound of turkey sausage and about 3 small chopped potatoes. (The original recipe calls for cubed bread, but I used potatoes instead.) I put the potatoes in a greased pan and added the cooked sausage on top of it.

Then, I chopped some onion, green pepper, and mushrooms (because we like veggies) and mixed it with 5 eggs and about a cup of reduced fat cheese.

Breakfast Casserole - Ready for the Oven The next morning, we preheated the oven 350 degrees and cooked it for about 45 minutes. It was amazing!
