Hippie Hash
Looking for an easy way to use up some common veggies? I came across this recipe and have been made it a couple of times. It’s super easy and would be good for a meatless meal.
First, I sliced an onion. The recipe calls for red onion, but we used a yellow one because that’s what we had. I put 1 tsp. of olive oil in a pan on the stove and added the onions. I let them cook for about 10 to 15 minutes until they start to get brown and yummy.
While that’s going on, we put a fork through three red potatoes and put them in the microwave for about 6 minutes, or until they were somewhat cooked. Once the onions were finished, I put them in a bowl and put 2 tsp of olive oil in the same pan. I added garlic and red pepper flakes to the olive oil. The recipe calls for a specific amount, but I just kind of put in what I thought would taste good. I chopped the potatoes into smaller pieces and put them in one layer in the same pan and put salt and pepper on them. I cooked for five minutes on each side. They should be browned a little.
Then, I put the potatoes in the same bowl with the onions. I added chopped zucchini (a whole one), chopped red peppers (a whole one), and chopped broccoli (about 2 cups) into the pan and cooked for about 6 or 7 minutes. You can cook these as long as you want, depending on how you like them.
Once they are cooked as much as you like, add the potatoes and onions back to the pan to heat everything up together.
We like to serve this in a bowl with feta cheese and a poached egg. Yes, I know the egg sounds weird but when the yolk soaks in with the veggies, It tastes really good!
The recipe does call for specific vegetables, but I would probably try it with other kinds of vegetables if I had them. When our CSA starts up again, we will be using this recipe again, I’m sure!
